Sarota, 27, has returned to his Dutch club FC Utrecht.
Fellow midfielder George Lambadaridis's contract with Roar also has ended.
The 23-year-old appeared in eight A-League matches for Roar over the past three years, battling back this season after a major knee reconstruction.
Brisbane also said it is in negotiations to release three young players to allow them to gain further experience at new clubs.
Kofi Danning, Ben Litfin and Jesse Daley are products of Roar's successful youth development program that saw eight players from the Young Roar ranks feature in A-League games in the closing rounds of last season.
Litfin, 20, a midfielder and former captain of Young Roar, has been released to NPL Queensland club Palm Beach.
Danning, 24, made 17 A-League appearances for Roar in two stints since joining from Sydney FC in 2011.
His contract with the club expires on 31 May, 2015 and he has requested a move to NPL Victoria club Oakleigh Cannons.
Daley was called into the Young Socceroos squad this month for a series in New Zealand against teams playing in the FIFA Under-20 World Cup.
The 17-year-old midfielder has sought a release to move to Melbourne Victory's NPL set-up.
Brisbane has wished the players well in their careers.
"We hope through our expert coaching at the Roar and nurturing youth development program that we have given all the players moving on a solid grounding on which to pursue their football dreams," the club said.
